Kimchi Cheddar Biscuits

Lee bought buttermilk to make fried shrimp and then realized the recipe he wanted to use didn’t call for it. Needing to use the buttermilk for something and because you can eat a biscuit whenever you dang well choose, we opted for these biscuits. The Kimchi is subtle, adding a bit of sourness to the savory. We ate these for dinner alongside a plate of Kimchi Fried Rice but my favorite way to eat these is as a breakfast sandwich piled with bacon, scrambled eggs, and a tiny bit of chili crisp. This recipe was adapted from Bryan Washington’s recipe featured in New York Times cooking. The tweak I recommend is softening the butter in the microwave before adding it.
Ingredients
¾ cup drained kimchi, finely chopped
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
2 tablespoons brown sugar
¾ cup shredded sharp Cheddar
6 tablespoons cold unsalted butter, plus more for baking sheet
1 cup cold buttermilk
Preparation
Saute the chopped kimchi in a pan over medium heat until the juices evaporate and the aroma intensifies, about 3 minutes. Transfer it to a plate and let it cool completely.
Mix the flour, baking powder, baking soda, and brown sugar in a bowl, ensuring there are no sugar lumps. Add the cheese and the cooled kimchi. Stir everything together; don't worry if the dough appears a bit rough.
Melt your butter in the microwave, for about 25 seconds. While stirring, slowly pour the butter into the buttermilk until everything is combined. Handle the dough minimally to prevent overworking.
Scoop the dough into 6 mounds onto a greased baking sheet. If your baking sheet isn't nonstick, use parchment paper instead. Gently pat the mounds into square shapes. (We like our biscuits large and misshapen but if you prefer smaller biscuits this recipe could likely make more than 6)
Place the biscuits on a baking sheet in the freezer to chill for at least 1 hour. Preheat the oven to 425 degrees Fahrenheit.
Bake the biscuits until they turn golden brown, which usually takes around 18 to 20 minutes. Once done, take them out of the oven and let them sit for a few minutes before serving.
To Serve
Serve hot with your choice of sides.
